The Story

Not only rich in flavor, Spain's most popular cheese is rich in history as well. Southern and Central Spain hosted many an ancient dispute over pasture lands between the Christians to the north and the Muslims to the south. Conquered by King Alfonso VI, the Muslims were forced further south, and the region was left in political turmoil. However, because of the discord, the farmers of La Mancha formed cooperatives which made the socioeconomic fabric of the area much stronger.

Usage Tips

You can Manche-go your own way with this one, but it's a sandwich cheese at heart. Melt it on anything and pair with a Rioja Tempranillo or sherry for dessert.
